Steps


  • In a bowl, mix together tequila, lime juice, chili powder, garlic powder, cumin, paprika, and salt to create a marinade.

  • Place the chicken breasts in the marinade and let them marinate for at least 30 minutes.

  • Preheat a grill or grill pan over medium-high heat.

  • Grill the marinated chicken breasts for about 6-8 minutes per side, or until cooked through.

  • Remove the chicken from the grill and let it rest for a few minutes before slicing.

  • Meanwhile, slice the bell peppers and red onion into thin strips.

  • In a separate pan, sauté the bell peppers and red onion until they are tender.

  • Warm the flour tortillas in the oven or on a stovetop.

  • Assemble the tacos by placing a spoonful of black beans and corn kernels onto each tortilla.

  • Top with slices of grilled chicken, sautéed bell peppers and red onion.

  • Drizzle salsa, guacamole, and sour cream over the tacos.

  • Sprinkle shredded cheese and fresh cilantro on top.

  • Serve the Saturday Night Fiesta tacos hot and enjoy!
