Steps
In a bowl, mix together tequila, lime juice, chili powder, garlic powder, cumin, paprika, and salt to create a marinade.
Place the chicken breasts in the marinade and let them marinate for at least 30 minutes.
Preheat a grill or grill pan over medium-high heat.
Grill the marinated chicken breasts for about 6-8 minutes per side, or until cooked through.
Remove the chicken from the grill and let it rest for a few minutes before slicing.
Meanwhile, slice the bell peppers and red onion into thin strips.
In a separate pan, sauté the bell peppers and red onion until they are tender.
Warm the flour tortillas in the oven or on a stovetop.
Assemble the tacos by placing a spoonful of black beans and corn kernels onto each tortilla.
Top with slices of grilled chicken, sautéed bell peppers and red onion.
Drizzle salsa, guacamole, and sour cream over the tacos.
Sprinkle shredded cheese and fresh cilantro on top.
